Do HP printers have USB?
Yes. There was blue tape over the USB port but I uncovered it and used the USB cable.
When I plugged a USB from my Ubuntu Linux laptop, into the HP Envy's USB jack, it worked.

1. I did not need to install any driver; Ubuntu had them already. I went to Ubuntu desktop >> Settings >> Printers >> Find printer. And clicked it. 
2. I opened a document in my desktop. I hit print. Yay, the printer actually printed it. Success.
3. The tiny touch screen on the HP printer said "finish setting up"
4. If it was just for my use I would have ignored it, because the test page printed fine.  But because I am gifting this printer to someone else, I didn't want it to look confusing. I wasn't going to give someone a printer that says "finish setting up" on it, forever and ever.
5. I reluctantly went to the app store on my phone.  I installed the HP Smart App there. I gave private information to that app on my phone and then used it to finish setting up my printer, by Bluetooth, I think was the connection, or maybe WiFi, not sure.
6. Then I fired up the Ubuntu default scanner: "GNU Document Scanner".
7. Panic for a moment, when it seemed to find the all in one but then when I pressed scan document it failed. The fix
8. Under Ready to Scan, there is a dropdown in GNU Document Scanner. I had to select the 4th choice: eSCL HP ENVY Inspire 7200 series [BE60D4] (USB)   If you don't see that view, click Scan New Document
   
9. Press the green button: Scan
   
10. It worked
